The lack of cell coverage is where WifiLapper wins out. It still gives GPS speed and I believe it also does lat/long G as well. Have you opened the files to see what data you have? Is LED1 showing GPS activity (10 times/second according to the guide)? Does LED2 flash when you press the button? I'm not sure if LED3 shows error states yet.

When you say "default configuration", have you actually enabled logging on any channels? If so, what rate are you logging at? How are you starting the logging?

The GoPro has an interface socket that can be used to turn it on/off. The easiest way would be to use a relay on an output to switch that on/off via Lua. I will probably do that at some point with mine.

It sounds like you might actually be displaying data, but it's so far zoomed out you can't see it. Are there any lines in the log where the GPS data is wildly out, perhaps at 0.00?

Given that it's not seeing the RCP after you install drivers, I think it's likely that it's running the older firmware and you need to install the older drivers to communicate with it. It says on the downloads page that you should use the older drivers for the older firmware, so if your RCP is running 1.1.x, then you install the old drivers to update it to 1.2.x. On the predictive lap timing it will show real-time delta on current vs best lap. Can I assume this is just for laps, rather than for multiple point-to-point runs?
