RASPBERRY SCREEN BATTLE: WAVESHARE 10.1 vs SUNFOUNDER 10.1

I've decided the tablet is a complexity I want to ditch... so I'm going to replace that part with 17 other parts that make a raspberry Pi setup. Seem like the screen is the first big choice. USB as backup power during pitstops?

Our 12v power to RCP is routed through our kill switch. Which is required to be OFF for fueling. Do y'all thing I will create problems if I setup a USB battery pack to supply power via USB to RCP during pitstops?
