As noted in my post in the intro section, we will soon be new RCP3 users. While I might just buy the Pi dash, I am considering the user of an Android tablet as we have a few of those kicking around. Is there a minimum memory and/or minimum processor requirement or recommendation for consistent performance and headroom for future system software updates?

Just get the Amazon Fire 8 HD or the Fire 10 HD. Choose the 10 if you want more screen real-estate.
