Help with scaling

I am trying to scale my coolant guage. I basically used an IR gun aimed next to where the temp probe goes to record temp readings and also use the Sensor Analyzer to monitor voltage readings from the sensor.
Problem is when the readings exceed the upper (or lower) bounds, it just reads 0.00.

Can someone smarter to me figure out roughly (I don't care if its dead nuts on) what voltage readings would be 260*, 310*, and 30* given the following values:

2.62v, 85*
2.55v, 120*
2.47v, 130*
2.40v, 150*
2.30v, 170*
2.20v, 185*
2.06v, 195*
1.90v, 215*
1.83v, 220*

I used this and just played around with values until I got something that looked right

to get
0.8v = 310*
2.9v = 30*
Who knows how close it is but way better than just showing 0.00
