We are trying to connect multiple raspberry Pi's to the RC Pro... One for dash display and the other as a dedicated lap timer. I had hoped that a USB splitter would work but the one we tried did not. What is the best way to do this? Is one direct connect and the 2nd on Wifi the only way?

You can connect only one device to USB at a time. You can connect a 2nd via wifi; you'd have to launch the app in a special way:
./main.py -- --conn_type=wifi
However, note - this is for internal testing and is not officially supported - you would need to test and verify.
Another option is to try using a bluetooth connection on the 2nd raspberry pi, and then that bluetooth connection should be found automatically, as if it was connecting over USB.
