Is there any concern using one of the I/O slots on the SensorX breakout board to feed the CoilX chip 5V power, RCP ground and the oulse input back to the RCP?

In my head it should be no issue because the CoilX should have converted/conditioned the signal to be safe for the SensorX breakout board, but don't want to find out the hard way that the SensorX board Can't handle the pulse signal output from the CoilX.

That should be fine. You would simply not need the pullup resistor for that channel.
